Vegetable Curry Mélange

1. Heat 1 bag frozen chopped onions till soft
(microwave, steam, or sauté).
2. Add 1-2 cans light coconut milk, curry powder,
1½ bags frozen veg. of choice (I used mixed & carrots), & some shredded coconut.
(Peanuts & raisins optional.)
3. I added plain nonfat yogurt to thicken it,
some habañero jack & Peruvian aji sauce for heat,
& it was transcendent.
