I watched 2 chef competitions on the Food network where they made multi-course Thanksgiving meals quickly, and I was fascinated. Tonight I mixed celery, salad onions (because they were faster than digging my own up, washing and cutting), mushrooms, a little cornbread stuffing mix, and bits of a rotisserie chicken with its juice, cooked it in the microwave for about 5-7 minutes, pausing to stir, and it was really good.

It’s inspiring to watch people skilled at their craft, like musicians, tool-users, and these chefs, as they’re so fearless in trying things. It comes from experience.
